Gluten Free Zucchini Corn Pancakes

These savory gluten free zucchini corn pancakes are delicious for any meal. Serve them with sour cream. Makes about 12 pancakes.

  1. Preheat oven to 200 degrees Fahrenheit.
  2. In a large bowl, combine the corn, cornmeal, onion, bell pepper, flour, Splenda, lemon juice, baking soda, salt, black pepper, and cayenne.
  3. Add the grated zucchini, basil, and parsley, and stir to combine.
  4. In a separate bowl, combine the egg, coconut milk, and sour cream.
  5. Add the wet mixture to the dry mixture, and stir just until combined.
  6. In a large non-stick skillet, heat the oil over medium-high heat.
  7. When hot, drop the batter by 1/4 cup per pancake into the skillet and flatten to a pancake shape. Cook for 2 minutes.
  8. Carefully flip the pancakes, and cook for 2 minutes longer.
  9. Transfer the cooked pancakes to a plate and keep warm in the preheated oven until ready to serve.
  10. Repeat with the remaining batter, adding more oil if necessary.
