This gluten free avocado black bean dip is delicious and super quick to make. Perfect for unexpected guests!
- 1 avocado, peeled and pitted
- 1/2 (15-ounce) can black beans, drained and rinsed
- 1 tablespoon lime juice
- 1 clove garlic (or to taste), minced
- sea salt, to taste
- 1/3 cup shredded colby jack cheese
- 1/2 cup low-fat sour cream
- In a microwave-safe bowl, mash together avocado, black beans, lime juice, garlic, salt, and cheese.
- Microwave dip on high for about 1 minute, or until cheese is melted.
- Top with sour cream.
